Lemon Artichoke Pasta

Prep Time:5 Min Cook Time:15 Min Total Time:20 Min

Serves 4

Ingredients

  • 8 oz. bowtie pasta, cooked according to package
  • 1 14-oz. can artichoke hearts, drained and chopped roughly
  • 12 asparagus spears, cut into 2″ pieces
  • 2 Tbsp. lemon juice
  • Zest of half a lemon
  • 3-4 garlic cloves, minced
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 2 cups milk
  • Salt & pepper, to taste
  • Grated parmesan

Instructions

  • 1 Over medium-high heat, cook artichoke hearts, lemon juice and zest for 5 minutes. Add asparagus and cook until tender (2-4 minutes). Remove and set aside.
  • 2 Add garlic and butter to pan and cook 2-3 minutes, until fragrant. Add in flour and stir – it should be quite dry and clumpy. Slowly add milk and whisk until smooth.
  • 3 Add cooked pasta, artichoke and asparagus mixture and stir to coat. Season with salt and pepper, serve with grated parmesan and additional lemon wedges.

Kielbasa and Cabbage Skillet
Serves 4
Prep time: 15 minutes
Cook time: 15 minutes

Ingredients
• 2 pounds fully cooked polska kielbasa, cut in half lengthwise, then cut into 2 inch pieces
• 1 tablespoon extra virgin olive oil
• 1 head cabbage, coarsely chopped
• 1 large sweet onion, cut into large pieces
• 3 cloves garlic, minced
• 2 teaspoons sugar
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 2 teaspoons rice wine vinegar
• 1 1/2 teaspoons dijon or brown grainy mustard

Directions
Heat olive oil in a large nonstick sauté pan over medium-high and add kielbasa. Cook, without stirring for 1 minute. Then stir occasionally for about 3 minutes. Transfer to a plate with a slotted spoon.

In the same pan with some of the rendered kielbasa fat, add the cabbage, onion, garlic, sugar, salt, and pepper. Stir to combine and cook for about 10 minutes. Mix in the vinegar and mustard; add the sausage back to the pan and cook for another 2 minutes to heat through. Taste and adjust seasoning, if necessary.

Serve immediately on its own or over mashed potatoes.

This really is a yummy place to eat ..hadnt heard of until I moved to CO ..AND BTW they deliver in 10 mins or less …not kidding ..
